    Default Chopped Veggie & Watermelon Salad

    Add the chopped tomato, watermelon, and bell pepper into a mixing bowl with olive oil and 1/2 of the feta cheese (4 oz)
    Put the greek yogurt, other 4 oz of feta cheese and oregano into the blender and blend lightly until it is blended, but not enough to make it too liquidy
    Pour this sauce from blender over veggie/watermelon mixture and toss.
    Enjoy!

    This sounds just wonderful. After reading this, I had to go and snack on some feta cheese. I also posted up my Greek Salad recipe.

    I have never tried watermelon inside a non-fruit salad before. I bet it is great!

    I am bumping this recipe because as it gets warmer outside, and the grocery stores start stocking whole watermelons, this is such a great, easy-to-make salad that appeals to almost everyone. Give it a try!! I am making some tomorrow, and I can't wait

    I forgot to add the most important ingredient - the MINT!!! This recipe calls for 1 1/2 cups fresh chopped mint...is there any way to add this into the recipe up above?
