Also now that my flowers have all fallen, where do I cut the stem?

usually people get the next size pot for repotting an orchids but it also depends on how many roots your plant will have after you clean it up lol. I try to work around the aerial roots and i try to put them inside the pot but becareful not to brake them. You can either cut the spike an inch or so from the bottom or just let it dry out and then cut if off. I usually let it dry out first
Hi, I made a video that shows how to put up a phal orchid including fitting it into the pot and the difference between air roots and those that have been growing in the media. All should go into the new pot and you should not over pot your orchid. Most likely, unless it is root bound, you will not need a larger pot.
