Cattleya Trouble:(

I bought this orchid from boxstore about a year ago. It is not doing well, so I repotted it and few days ago. It is now in a course fir bark and perlite mix from gubbler. I cut off all the roots, because they were rotted

Now it only has three aerial roots with another one growing.
Sorry, I'm not good at taking care of orchids that much, but I'm trying... Also, what is the weird growth protruding from the orchid? Thanks, a lot

If the pseudobulbs are plump I wouldn't water especially has it doesn't have any roots. It's pointless watering if roots aren't present. Just don't water for at least a month when I hope that you will see some roots developing from the rhizome.

You have a new growth on that

Expect to see new roots forming shortly. Cattleya roots die off after each season, as the roots from new growths begin to grow.

As you have a new growth you can stimulate root growth by lightly moist the media now and then. But you have to let it dry up in between as you should not keep the media wet as it will brake down very fast.
